Joyful Jane Sourdough Starter is 5 year old!

Joyful Jane sourdough starter is successfully made on 31 March 2014, has turned to 5th year in 2019.

This is an awesome moment in every year. Even though I am not baking sourdough often, yet willing to maintain the feeding to keep it growing, watching it growing strong each day, smelling it fragrance is a joy to my soul, lucky me who can still keep it alive each time. 

Wishing to have more time enough to bake sourdough bread, Gab and I definitely love to have sourdough breads more often. 

Happy 5th Birthday to Joyful Jane Sourdough Starter! 

Fed it twice in a day, 😂 overflow!

Sourdough Bagels Thermomix Recipe



Sourdough Bagel Thermomix Recipe


10g      Sugar
210g    Water
100g    Sourdough Starter (60% hydration )

35g      Butter in room temperature
360g    High Protein Flour
5g        Salt

Boiling
1 tbsp Baking Powder
A pot of water app. 2 litre water

Glazing
Egg + pinch of salt, lightly bitten 


Preparation 

1) Put first 3 ingredients in a mixing bowl, mix

     20 sec / Speed 3


2) Add in next 3 ingredients, start with speed 3 then turn to speed 6 for 10 seconds. 


3) Continue kneading, 

    3 min / knead
  1. Take out and knead into a round dough, wrap with Thermomix baking sheet, let the dough sit in for the first rising - 2 hour. 
        I keep in over with 50°C 

2. Take it out after 2 hour, knead it and press the excess gas out to knead into round dough, divide into 6 equal portions, roll into long slim dough, press one end, lay the slim end on the flat end make into a loop like doughnut 🍩, wrap and close the seam.

3. Align them on individual 3.5" square baking paper (prepare before starting, easier to pick it up and slide them into hot pot) in a baking pan, spray water, keep into oven with 50°C, let it prove for 2 hour.

Boiling
4) Pre-heat oven at 210°C

5) In a pot fill with 2 litre water, add baking soda, boil.
Put in bagel together with paper sheet upside down, boil it for 1 minute, remove paper, turn over to continue boil for 1 minute. Remove and drained, align in a lined baking tray.

It is normal that they look wrinkled 



Do the same to another 5 sourdough bagels.

6) Egg wash. Sprinkle mixed nuts and poppy seeds (optional)




7) Bake for 20 minutes, rotate the tray to get an even tone.

Cranberry Orange Buttermilk Scones



Have not been baking scones, this time I will want to make a recipe that I have not tried baking instead of Milk Scones, Cranberry Orange Buttermilk Scones. 

Thermomix Recipe

Cranberry Orange Buttermilk Scones


Ingredients:
1 orange skin, zest

Ingredients A:
700g Plain Flour
75g Brown Sugar
2 1/2 tsp Baking powder
1/2 tsp Baking Soda
3/4 tsp salt

Ingredients B:
180g Chilled Butter, diced
240g Butter Milk
230g Dried Cranberry, soaked with warm water, drained.
Topping and Glazing Ingredients
1 tbsp Milk
2 tbsp Brown sugar
1/4 tsp Ground Cinnamon

Preparation:

1) Grate orange skin
    mc / turbo / 2 sec for 3 times

2) Add A, to blend
    mc / 30 sec / speed 8

3) Preheat oven at 200℃

4) Add B to blend
    mc / 30 sec / Rev / speed 7


5) Transfer half batch of dough to baking tray lined with baking sheet or greased pan, lightly hand knead to form a 1.5 inch thick round disc. Then do the same on the other half dough.

6) Cut each into 12 wedges, leaving them on the baking  tray.

7) Brush with milk, then sprinkle on the sugar combined with cinnamon.Then slightly separate them to make some space in between each wedge, 

8) Bake for 15 min to 20 min or until golden brown.
I made the disc on a baking mat, but I thought it is unnecessary to use mat, very minimal kneading needed,  instead, you may just knead and make dough disc on the baking tray straight away, less washing! :p

Know the math, know to bake!

Back to School Calculation!!


Know the math, know to bake! :) Like what Chinese said: “知己知彼,百战百胜。”  mmmmm, doesn't relate?! Forget about it! 


I know there is this percentage calculation in all bread recipes, like the one in sourdough bread recipes - Calculating Hydration Percentage of Sourdough Starter. That is why you don't need to hunt for recipe and try to collect all recipes for different types of bread, you may write your own recipe if you know the percentage of one nice and soft bread recipe. 


Base on the bread recipe I love the most, which is soft and fluffy - Challah Bread

Bread Flour  100%
Liquid  44%
Butter 9%
Sugar 18%
Dried Yeast 1.2%
Salt 2%

Total of 174%


If you have 300g bread flour


The formula is

 300 x  (the percentage number) then divided by 100

 as I am using phone calculator which doesn't have % in the keypad, and assume you do the same. 

Bread Flour  100%                              300g
Liquid  44% (300 x 44 *100)             132g (egg + milk + cream or just plain water)
Butter 9%    (300 x 9 *100)                27g             
Sugar 18%   (300 x 18 *100)              54g
Dried Yeast 1.2% (300 x 1.2 *100)   3.6g (1 tsp is equal to 2.8g)
Salt 2%

Ok, got it yet? Whenever you use this, you can make all different sizes bread. well of course the sugar and butter ratio are very flexible. 
Only that the ratio between flour:water has to be careful, too less of water gives harder bread.



Plain BREAD

If you intend to make bread without sugar and butter, then the ratio between flour : water has to be higher in water ratio.

Normal ration to flour alone is 66%


Which means, if you are making bread for just as simple as flour, water, yeast and salt

The ratio goes:

Bread Flour  100%

Liquid  66%

Dried Yeast 1%

Salt 2%


You may also decide how much dough you want. 

If you wish to make only total weight of 500g dough, the total percentage of above soft bread is 174%

So it will be 1.74


Here is the formula
Use the desired number of total weight (500g) divides 1.74

Flour 500g / 1.74  =  287g

Now we know the weight of bread flour
Bread Flour  100%                             287g
Liquid  44% (287 x 44 *100)             126g (egg + milk + cream or just plain water)
Butter 9%    (287 x 9 *100)                26g             
Sugar 18%   (287 x 18 *100)              52g
Dried Yeast 1.2% (287 x 1.2 *100)   3g (1 tsp is equal to 2.8g)
Salt 2%  (287 x 2 *100)                       6g

Total of 174%  = 500g Total weight



Tadah! haha actually.... don't border lah! Just follow whatever recipes you have!

Jane's Chia Sourdough bread

The recent found out for Thermomix users to make sourdough bread, it is more hassle free when I modify the steps to dilute starter with water first than to add starter after the dough is formed. 

Therefore you will find that this recipe is to dilute starter with water in the first step. This makes it easier to blend in. 

Thermomix Recipe

Jane's Chia Sourdough bread  

Ingredients
230g Water ( 150g water + 80g milk)
120g Sourdough starter (60% hydration)
360g High protein flour
60g Wholemeal Flour
10g Salt
20g Sugar
20g Chia Seed
80g Hot water

Preparations:

1) Add water and sourdough starter, mix well
    15 sec / 37°C / speed 3

2) Add all flours, salt and sugar to mix
    30 sec / speed 6

3) Continue to knead
    4 min / knead

4) Oil a plastic bag, set aside.

5) Roll dough into ball shape, keep in the plastic, squeeze out air from the bag, secure the bag with rubber band.

6) Let it sit for 1 hour. 

7) Take out dough, press air out after an hour, repeat step 2, go for the first proving, approximately 3 hours. (Or keep in fridge overnight for at least 12 hours)

8) Before take out the dough for second knead and proving, pour the boiling water over the Chia seeds. Stir and set aside the chia gel to cool.

9) On a mat, press air out from dough, pull it long, pat the dough out, spread half of the Chia gel over the dough, flip the dough over, and spread the remaining Chia gel over it. Flip the dough over again and again to incorporate the Chia, but not more as the dough is now loaded with the seeds and is fragile. 

10) Divide into smaller balls, lay two balls in a greased loaf baking pan, keep in the oven for second proving, about 6 hours

11) Preheat oven at 210°C. Put in the loaf pan, spray the loaf and oven with water.
      210°C 10 minutes
      200°C 10 minutes
      180°C 10 minutes

A surprise gift from Hong Kong

A surprise parcel from childhood friend, who are now married to Hong Kong, thanks so much of this sourdough recipe book, nope, not my birthday, it was a surprise gift. Thanks so much, I loved this book.
She mailed me a cookies recipe book last year, this book also teaches technique for cookies decoration,sadly i haven't tried baking one yet.
Perhaps she saw many photos of sourdough breads posted up in my timeline recently, so thoughtful of her sent me this recipe book.
"Start baking sourdough bread with an apple" the title of this book was  written by a Japanese baker, translated into Mandarin. Recipes were written in small portion though, good enough for small family or individual consumption. Love it.
It teaches us to use apple enzyme to make sourdough starter, I believe fruit sourdough gives extra flavour and enriched the aroma of all breads, and hence without any hesitation I started the apple enzyme 3 days ago, temperature in Malaysia is higher than Japan, I reduce the fermenting period to 4 days instead of 5 days as written.  When I tried to take a sniff this morning, it smells awesomely good, apple enzyme simply richer than ordinary sourdough starter that is only called for water and flour.  I will have to come back and check it out tomorrow.
Just can't wait....

The making of Jane's Bakery


First time ever had this thought to bake cookies for sale! Dear friends, thanks for all your support, because of you, this Jane's Bakery is established, and I have a different CNY this year, ABUNDANCE! Wishing you all a Blessed CNY!
