Matcha ManTou

 抹茶馒头 / 馒头 Matcha Mantou or steamed bun



小美食谱 

面团材料1:(除掉抹茶粉和黑芝麻就是普通馒头的材料了)

60克 水

60克 鲜奶 (可以只是用水)

30克 黄油

30克 糖

1汤匙 抹茶粉

1茶匙 干酵母


材料2:

250克 包粉 (普通面粉也可以)

10克 黑芝麻

1/4 茶匙 盐


蒸包:

300克 水

做法:

1)放入材料1,搅拌

      2 分钟 / 37°C / 速度2

2)加入材料2,揉面团

      3分钟 / 揉面团键

3)开始揉成条状,切开小段就可以放入Varoma 篮。或者预备另一团普通面团,可以来一个抹茶卷形状。

4)发酵45分钟

5)放入300克水,盖上,塔上Varoma蒸篮。

     18分钟 / Varoma / 速度2


假如您是做双食谱,那么您需要一个更大的蒸锅。

Matcha Mantou or steamed bun

Thermomix recipe

Ingredient A:(Exclude matcha powder and black sesame this would be plain bun recipe)

60g Water

60g Fresh milk (may just use water)

30g Butter

30g Sugar

1tsp Matcha powder

1tsp Dried Yeast


Ingredient B:

250g Pau flour (replacement with normal flour)

10g Black sesame seeds

1/4 tsp Salt


Steaming:

300g Water

Preparation:

1)Put in ingredient A

      2 min / 37°C / speed 2

2)Add in ingredient B, knead

      3 min / knead mode

3)Remove dough from TM bowl, hand knead and roll into long string dough, simple cut into small pieces, lay into Varoma dish. Or perhaps prepare another plain dough to make matcha swirl.

4)Let it prove for 45 minutes

5)Put in 300g water,Stack Varoma on it, steam

     18 min  / Varoma / speed 2


You will need a big steamer if you are making double recipe. 



在这里我用了各面团380克的食谱,所以需要大蒸锅。
In here, I was using 380g flour for both recipes, I needed a large steamer.

Milk Bun Rolls with triple cheese



Milk Bun Rolls thermomix recipe

Ingredient A
Milk 250g
Egg 50g 
Sugar 40g
Yeast 5g

Ingredients B
High protein flour 450g
Milk powder 25g
Salt 4g (pinch)

Later...
Butter 50g 

Preparation:
1) Mix Ing.A 
20 sec/speed 3

2) Add Ing.B to mix
2 min / speed 3-5-6 (increase speed slowly)

3) Add butter then knead
6 min/ knead 

4) divide into 10 portion, roll into ball shape, wrap.
Rest 15 minute.

5) Flattened the dough and roll into long oval sheet, add in your choice of cream or paste or even sausages. 
Roll up, place seam side down. 

6) keep tray in oven with 30C with a cup of water, let it prove for 1 hour until double in size. 

7) Egg wash, and bake in 150C for 25 minutes. 

Lastly raise to 180C bake for another 2 min for golden brown!

Sourdough Bagels Thermomix Recipe



Sourdough Bagel Thermomix Recipe


10g      Sugar
210g    Water
100g    Sourdough Starter (60% hydration )

35g      Butter in room temperature
360g    High Protein Flour
5g        Salt

Boiling
1 tbsp Baking Powder
A pot of water app. 2 litre water

Glazing
Egg + pinch of salt, lightly bitten 


Preparation 

1) Put first 3 ingredients in a mixing bowl, mix

     20 sec / Speed 3


2) Add in next 3 ingredients, start with speed 3 then turn to speed 6 for 10 seconds. 


3) Continue kneading, 

    3 min / knead
  1. Take out and knead into a round dough, wrap with Thermomix baking sheet, let the dough sit in for the first rising - 2 hour. 
        I keep in over with 50°C 

2. Take it out after 2 hour, knead it and press the excess gas out to knead into round dough, divide into 6 equal portions, roll into long slim dough, press one end, lay the slim end on the flat end make into a loop like doughnut 🍩, wrap and close the seam.

3. Align them on individual 3.5" square baking paper (prepare before starting, easier to pick it up and slide them into hot pot) in a baking pan, spray water, keep into oven with 50°C, let it prove for 2 hour.

Boiling
4) Pre-heat oven at 210°C

5) In a pot fill with 2 litre water, add baking soda, boil.
Put in bagel together with paper sheet upside down, boil it for 1 minute, remove paper, turn over to continue boil for 1 minute. Remove and drained, align in a lined baking tray.

It is normal that they look wrinkled 



Do the same to another 5 sourdough bagels.

6) Egg wash. Sprinkle mixed nuts and poppy seeds (optional)




7) Bake for 20 minutes, rotate the tray to get an even tone.

Puppy Face Soft Bread and Buns

Thermomix Recipe

Jane's Puppy face Soft Bread / Sweet Buns 

Ingredients A:
200 g Whipping Cream
70 g Sugar
45 g Butter
2 tsp Instant Yeast

Ingredients B:
500 g Plain Flour
1/2 tsp Baking Powder
90g Milk Powder
Pinch of  salt
1 Egg, plus the egg white from egg wash ingredients

Ingredients for topping:
Sesame seeds for sprinkling 

Egg Wash
1 Egg yolk (add egg white to ingredient B)
1/4 tsp salt
1 tbsp water
(Beat till smooth)


  • Instructions:

1. Mix ingredients A,
    mc / 1 min / 37°C / speed 3

2. Add ingredients B to mix well
    mc / 30 sec / speed 3-6 ( increase from 3 a few seconds turn to speed 6)

3. Then, knead
    mc / 3 min / knead 

4. Transfer the dough to Thermo mat, knead and mold into a ball shape, wrap with Thermo mat to proof for 1 hour.

5. After 1 hour degas the dough. Divide dough into 60g to make burger buns or long sausage buns.  45g for puppy face buns

6. For puppy buns, roll round and follow by making it oval shape, press flat, using plastic cutter to make 4 cuts.

You will need to use a knife to make a slit to allow raisins fit into it.

Prove it for another 45 minutes

Egg wash these puppy face dough


6. Place bread dough on a greased baking tray, cover with cloth, wait for another proofing about 45 minutes. 

7. Preheat oven at 180°C. Egg wash the bread dough, for sweet buns, sprinkle lots of sesame seeds over the bread before baking. Bake for 12 minutes 

8. Let it cool on cooling tray.
