Mango passion fruit Coconut smoothie ice cream

Very very long name, it is smoothies then make it into ice cream.
Thermomix Recipe
Fresh Mango Passion Fruit Coconut Smoothie. Blend with speed 10 for 1.30 minutes.
Yup, is a smoothie, blended and freeze it again. Hence now ice-cream!

Thermomix TM5 Recipes

Clams in the Thermomix 

Tralnslated Recipe for Clams in the Thermomix

ingredients
750g small clams, soak in salt water (1 Tbsp salt for 2 cups of water)

Ingredients A:
70 g extra virgin olive oil
100g onion, cut in half
30g garlic cloves

Ingredients B:
1 cup breadcrumbs
100g white wine
100g water
50g lemon juice
1 tsp salt to season
+
5 sprigs of parsley leaves, chopped.

Preparation:
!) Wash the clams and let soak in salted water for 30 minutes, to de-grit and clean clams. Drain in the basket and set aside.

2) Place the cup olive oil, onion, garlic cloves to saute
    7 min / V / speed 2

3) Add ingredients B, and clams, sprinkle with parsley, cook
    15 min / V / Speed 2.

Cook till all the clams had opened, extend the cooking time for 2 minutes for further adjustment.
Transfer the clams into a serving bowl. Drizzle sauce over the clams. Serve immediately.

Soufflé à la Vanille Thermomix

Oh no, soufflé tumbling down so quickly I don't have enough time to snap the tall soufflé...
Haiz... Make sure I get ready the phone before taking out soufflé.

Thermomix Recipe 

Vanilla Soufflé ( Soufflé à la Vanille) Recipe

White Sauce:
15g Butter
20g A.P. flour
120g Milk
1/2 tsp Vanilla Extract
Pinch of Salt
2 egg yolks

French Meringue:
2 egg whites
2 tbsp caster Sugar
Preparation:- prepare 3 ramekins, greased and dusted with castor sugar, set aside.

Method:
White Sauce
1) Cook butter, flour and milk
     6 min / 98℃ / speed 3

Check the consistency, it should be like thick cream, extent the cooking time if it is still waterly.

2) set TM5 first then add vanilla, pinch of salt and  egg yolks one by one, mix
    40 sec / speed 3 

3) Transfer into a mixing bowl, set aside. (Use a cling wrap to cover direct contact with batter if you wish to make meringue later)
*Preheat oven now

French Meringue
4) In a clean bowl, insert butterfly, put in egg whites, whisk
    2 min / 37℃ / speed 3.5

Add sugar 1/2 tbsp by 1/2 tbsp after 1st minute.

5) Mix 1/3 meringue into white sauce, mix until homogeneous, mix the balance into batter gently fold in and mix well.

6) Fold batter into ramekin, full cup, tap the cup on table to get rid of large bubbles, continue to fill the ramekin full, run thumb around inside of the rim.

7) Bake at 200℃ for 18 - 20 minutes.

Soufflé doesn't wait for man, man has to wait for Soufflé, make sure you are ready before Soufflé is taken out.

Focaccia Bread

Baking my first time ever Focaccia bread, I have seen it selling in bakery shop, but never tried buying once, it was rather expensive, for one square piece costs about RM3.
The recipe of this Focaccia is from TM5 cookchip, the basic recipe books, steps are simple and easy to follow.
Only a few ingredients make this flat bread.

How to prepare Crunchy Shrimps for Seafood Mayonnaise

Crunchy Frozen Shrimps preparation. This is the first time I buy frozen shrimps batch from Giant Hypermarket - Giant brand, I used to get them from IKEA food department.
If I got them from IKEA, I don't have to cook them. 



Giant brand shrimps are raw shrimps, below are the steps, easy and simple steps.

Jane's Crunchy shrimps preparation: 

1) Prepare a bowl of ice cubes in filtered water, set aside.

2) Put 500g water in TM, cook  
    mc / 4 min (or when temperature reaches) / 80℃ / speed 2

3) Pour rinsed shrimps to cook  
    mc / 30 sec / 80℃ / Rev / speed 1 

4) Pour shrimps in simmering basket to rinse away hot water, toss shrimps into ice water, soak for 30 sec to 1 minute. Drained. Ready for use.

Try it. I use this for seafood sandwich - 

Seafood Mayonnaise 

1 tin of tuna flakes, chopped 4 crab meat sticks, chopped shrimps, mayonnaise, parsley flakes, salt, pepper and sugar.
Mix them well with forks, or throw everything into TM bowl to mix 10 sec / speed 3.5

Stir Fried Udon in Thermomix

Our lunch, stir fried Udon.
Gab asked: "Which recipe do you follow? Very nice!" "Nice? It's my recipe, I just cooked it without recipe." I replied "Thanks ma, very nice, I like to eat." I just smiled.
Mama is happy with just a simple appreciation. Agreed?

Thermomix Recipe

Stir Fried Udon 

Just sharing the steps of preparation:
1) chop garlic, add oil to sauté.  
    3 min / V / speed 1

2) Add fresh mushroom sliced, and veggies.  
    2 min / V / Rev./ stir 

3) In a bowl, rinse udon with running water. Drained, add soy sauce, dark soy sauce, pepper, Chinese rice wine, mix well. 

4) Add udon noodles, 50g water, stir fry. 
    2 min / V / Rev. / Stir

5) Add prawns at last 1 minute.

I just love making rye baguettes, I think I like the texture and the colour more than anything else, they just look super cool.

Egg mayonnaise Thermomix Recipe 

Preparing egg mayo sandwich on rye baguette for our breakfast.

To cook hard boiled egg on TM5:
Insert simmering basket, pour 1200g water, place 2 eggs in basket, cook
mc / 13 min / 105℃ / speed 3
Deshell the eggs, break it with a fork, add 1/4 tsp salt, 1/4 tsp sugar, 6 - 8 tbsp mayonnaise (adjust to your own liking), sprinkle oregano, and some pepper to stir and mix well.

Rye Sourdough Baguette Thermomix Recipe 


For TM5 users, we have rye baguette recipe in cook chip, just play some impromptu by changing flour and add in 10% of rye flour to make rye baguette.

SCF Team July TM Cooking Class in the making

Last night cooking fun homegroup meeting, team was working out to improve recipes to achieve best result. Always keep trying and making it better.
