Espresso Cupcakes

Espresso cupcakes

This recipe is shared by my sister. 

Espresso Coffee Choc Cupcakes
Preheat oven 180°c
Bake time : 20mins

Ingredients
100g dark choc, chopped
150gm unsalted butter at room temperature
2 eggs
100gm castor sugar 
2 tbsp cocoa powder
100gm self-raising flour
2 tsp instant coffee dissolved in 1 tbsp boiling water
40gm choc-covered coffee bean (i didnt use) 


Butter cream:
100gm unsalted butter
100gm icing sugar sifted
2 tsp instant coffee dissolved in 1 tbsp boiling water
Dark choc, finely grated


Steps :
1. Melt chopped dark choc in bowl over a pan of simmering water, set aside to cool
2. Beat butter n sugar till pale n fluffy
3. Beat in eggs, one at a time, 
4. Stir in melted choc n cocoa powder, mix well
5. Sift flour into mixture n stir in. 
6. Stir in coffee, followed by coffee bean
7. ** i added 4 tbsp milk
8. Bake for 20mins or until a skewer inserted in d centre n comes out clean
9. Cool on rack.


Topping
Beat butter, icing sugar n coffee untill pale n fluffy
Sprinkle finely grated dark choc



This espresso sachet gives strong coffee taste that we like!

Steamed Cracker Layered Cake

I am encouraged by Tina, one of my customers has already started venturing in converting ordinary recipes to Thermomix Recipes, I would like to share of her converted recipe here to bless more of Thermomix users. 

This is the recipe template, putting pictures and words in png format easier for storage in phone, a little more effort needed to do extra miles!

Thermomix Recipe

Steamed Cracker Layered Cake

Ingredients:
250g butter
170 g brown sugar
200 g cream crackers (I use Jacobs Hi Iron)
5 eggs
2 1/2 tbsp cocoa powder

Method
1) Cream butter and sugar
     mc /  15 sec /   sp2

2) Run sp3, add eggs one by one thru mc hole till well mixed

3)Add cream crackers. 
    mc / 15 sec / sp 5

4) Pour out half the batter. 
Add choco powder in the other half. 
     mc / 10 sec / sp 3
Pour out into separate bowl

5) Wash TM bowl. Put water for steaming, qty just over the blades

6) Line small cake tin with some butter. Pour 1 layer of original flavour batter into cake tin.
      Steam 10 min / V /  sp2
(*Add at least 500g water, start counting when water reaches Varoma)

7) Put chocolate flavour batter. Steam 
     7  min / V / sp 2

Repeat till all batter is finished. 

* Please check water lavel.  Quantity needed differently depends on the number of layers you make.

8) Last round steam 10 min / V / spd 2

Simple Osmanthus Jelly

Beatiful Osmanathus Jelly Jars

Dried Osmanthus, can be obtained from Chinese Herbal Shop


Ingredients Needed

Thermomix Recipe

Jane's Simple Osmanthus Jelly recipe

Ingredients A
1 ltr Water 
150g Sugar
1 tbsp Agar agar powder 

Ingredients B
1 tbsp Dried Osmanthus flowers
20g Goji 

Preparation 
1) Boil A  
    mc / 7 min / 100℃ / speed 3

2) Add B to continue to boil  
    mc / 5 min / 100℃ / speed 1

3) Pour into small cups, let it cool about 40 minutes, (depends on size, larger size takes longer time) 

4) Take a small spoon to give a quick stir, if the time is right, Goji and osmanthus flower will be set wherever it is. 

5) Then keep refrigerated.

This is in step 4, while the jelly is half set. Use a small spoon to give it a stir, flowers and goji will just set wherever they stop. Very beautiful scene. I love watching them.

Niangao with grated coconut dessert



Thermomix Recipe

Steamed Niangao coated with grated coconut

Ingredients

Steamed Niangao (any amount, if you are using frozen niangao, defroze it, then slice them, this helps to melt them easily. )
1 Fresh grated coconut
pinch of salt
500g Water

Preparation

1) Place Sliced niangao in a greased steam pan, add 500g water, stack Varoma dish on TM, steam.
    18 min / V / speed 3

2) Then remove steamed pan, grated coconut, mix with some sugar and pinch of salt, continue steam
    5 min / V / speed 3

Using two chopsticks to dig and turn the melted niangao. Coat with grated coconut.

美善品万能机食谱

蒸年糕椰丝甜点

材料

年糕 (切片,好让蒸煮的时间剪短)
新鲜椰丝,加少许盐,拌匀

500克 水

做法

1) 加 500克水入主锅, 将切片的年糕摆放在蒸盘,置放再蒸锅里, 塔上蒸锅,蒸
    18 分钟 / V / 速度 3

2) 然后拿开蒸盘,放入椰丝一碗,继续蒸
    5 分钟 / V / 速度 3

这个时候年糕很粘稠,用筷子卷起,然后粘在椰丝碗里。.

Nian Gao Thermomix Recipes


At times, every started to homemade Nian Gao.
Niangao direct translated as year cake or Chinese New Year's cake, is a dessert prepared from glutinous rice. While it can be eaten all year round, traditionally it is most popular during Chinese New Year - Nian Gao is rhyme with A year taller or a year better, brings good fortune to someone. 

The above photo is a week-old Nian Gao, the longer you keep, the darker it will become, hence do not have to be curious of your NianGao presents to be pale in colour on the first few days. 


This NianGao was made in year 2015, it was using TM31. After a month that it has becoming harden in the outer layer, I kept it in freezer. Best is slice it before keeping, easier to proportion the amount whenever you need it.

Thermomix Recipe

Jane's Nian Gao

Ingredients

500g Glutinous Flour
500g Water
350g Brown Candy 片糖 (you may replace with Molasses Sugar or just brown sugar)
50g Brown Sugar, or Gula Melaka (has better taste)

Steaming
1500g Water

Preparation

1) Place brown candy and gula Melaka to mill
    mc / 2 sec / Turbo   x 2 times

2) Add 500g water to boil
    mc / 7 min / 100°C / speed 2
    Set aside to let it completely cool

3) As soon as the syrup temperature drops to room temperature, add glutinous rice flour and oil to mix well
    mc / 1 min / speed 4

4) Pour mixture into a tin that wrapped with banana leaves. Allow the banana leaves to bend outward and secure with a string, as glutinous rice will pull inward and shrink as it gets dryer and harder, this will wringle the outer rim.
 
5) In a clean TM bowl, add 1500g water, stack Varoma Dish in position with glutinous mixture tin to steam.
    60 min / Varoma / speed 1

7) The colour of Nian Gao will only turns into darker tone after a few days

8) By then you may trim away extra banana leaves. Remove Nian Gao from the tin and keep in a dry place.

Oatmeal Fatt Koh


 "Have you noticed it? There are so many food nowadays made in oatmeal." my brother said this during Chinese New Year while he was enjoying homebaked oatmeal cookies.

And yes, there are oatmeal bread, oatmeal yoghurt, oatmeal milk, oatmeal cake, what about oatmeal fatt koh?

Jane's Oatmeal Fatt Koh 麦香发糕

9 paper cupcakes

Print Oatmeal Fatt Koh Recipe

Ingredients 材料A

250g Milk 鲜奶
140g Sugar 幼糖
2 tsp Instant Yeast 酵母

Ingredients 材料 B

180g Pau Flour / Cake Flour 包粉 或 低筋面粉
2 tsp Double Action Powder 双倍发粉

Ingredients 材料 C

50g Oatmeal 燕麦

Steaming  蒸煮

500g Water 水

Garnishing 撒料

Castor Sugar 幼糖
Oatmeal 燕麦

Preparation 做法

1) Combine ingredient A together and mix 将A 料搅溶
    mc / 2 min / 37°C / speed 3

2) Add ingredients B to mix well 加入B料,拌匀
    mc / 10 sec / speed 3.5

     scrape down flour that stick on the side of TM bowl, mix again 刮下一些粘在主锅的面粉再搅拌
    mc / 20 sec / speed 3.5

3) Leave it in TM bowl to proof for 30 minutes 让它留在主锅内发酵30分钟

4) Add C to mix well, 加入C料,拌匀
    mc / 2 sec / speed 3.5

 Pour batter into paper cup to 95% full.倒入纸杯 95% 满。

5) In a clean TM bowl, place 500g water to bring to a boil. 洗净的主锅,倒入水,将之煮沸
    mc / 7 min / V / speed 2

6)Meanwhile, scatter white granulated sugar on the surface forming the word of "Y". (The sugar once melted will help to break the fatt koh into a smiley face). Sprinkle some oatmeal. Arrange cups in Varoma dish, cover with a fabric before close lid.
这个时候,在浆液上撒上糖成 “人”字形后(当糖溶解时会将糕的表面挣开成盛开的花朵状),再撒上燕麦。


7) As soon as water has reached to boiling temperature, stack Varoma dish in position to steam fatt koh. 当主锅里的水达到沸腾的阶段,就立刻塔上蒸锅,蒸煮
    20 min / V / speed 2
 
Using granulated sugar to make the letter Y, this helps fatt koh to have a smiley face!

Sprinkle some oatmeal on the surface

Apple Cake

Apple Cake


Ingredient A
4 Red apples, peeled and remove core and seeds.

Ingredients B
130g Butter, softened, plus extra for greasing
3 Eggs
150g Sugar
30g Brandy (optional)
200g flour
1 tbsp baking powder
1 pinch salt

Topping
Icing Sugar fir dusting (I skipped this)

Preparation

1) Preheat oven to 180℃. Grease a round cake tin (26 - 28 cm ) or 23 - 24 cm square tin, and set aside

2) Using sharp knife, make parallel incisions on the outside of the apple, cutting down but taking care not to cut completely through. Set apple quarters aside.

3) Place ingredients B and mix
    20 sec / speed 6
Pour mixture into cake tin and spread evenly with spatula. Arrange reserved apple quarters on top, one next to the other, with incisions facing up.

4) Bake for 30 - 40 minutes or until a skewer inserted into center of cake comes out clean. Allow cake to cool on cooling rack. Dust icing sugar before serving.

* Replace brandy with rum.
* Replace apple's with peach, pears, apricot or any other fruit to your taste.

Marbled Cheesecake Brownies


Marbled Cheesecake Brownies


Ingredients
·         60g butter
·         125g PHILADELPHIA Block Cream Cheese, softened
·         1/4 cup (55g) caster sugar  
·         1 egg
·         1 tablespoon plain flour
·         1/2 teaspoon vanilla essence

·         Chocolate mixture:
·         125g dark cooking chocolate, roughly chopped
·         90g butter, extra
·         2 eggs, extra
·         3/4 cup (165g) caster sugar, extra

·         1/2 cup (75g) plain flour, extra
·         1/4 teaspoon baking powder
·         ¼ teaspoon salt
1/2 cup (60g) coarsely chopped pecan nut


Chocolate cake glaze
200g plain chocolate, chopped.
3 tbsp water
2 tbsp single cream
7g unsalted butter. Chilled.

 Method: 
Chocolate Mixture: TO make chocolate mixture melt chocolate and extra butter in a bowl over a pan of hot water, stirring constantly, then cool.  Use an electric mixer to beat extra eggs until thick and creamy, gradually beating in extra sugar while doing so. Sift in the extra flour, baking powder and salt then blend in the cooled chocolate mixture. Stir through the pecans. Measure 1 cup chocolate mixture and set aside. 
 Cream cheese batter: PREHEAT the oven to 160C and grease and base line a shallow 23cm square cake pan. Cream together the butter and PHILLY Block Cream Cheese with machine mixer.  Beat in sugar until mixture is light and fluffy, then add egg and beat thoroughly.  Stir in flour and vanilla essence and set aside.
SPREAD chocolate mixture in prepared pan. Top with reserved PHILLY mixture then drop spoonfuls of reserved chocolate batter on top.  Swirl a knife lightly through batter to make a marbled pattern.

BAKE in preheated oven for 45-50 minutes, until a skewer inserted comes out clean. Remove from oven and leave to cool in pan.

Chocolate cake glaze
Place chocolate, water, butter and cream in a small heat proof bowl over a boiling water, and stir until smooth remove from heat. 

Glaze the marbled cheesecake brownies when cool. Best is keep cheesecake in fridge before glazing. 


These have a marvelous fudgy texture; cheesecake with a crispy top, marbled with chocolate and studded with pecans. The mixture is baked in a square then cooled and cut into individual squares.  They are great for picnics, as a sweet finish to a barbecue or just with a glass of ice-cold milk at home. They’ll go quickly at kids’ birthday parties too.

Triple Chocolate Cheesecake


Triple Chocolate Cheesecake




Ingredients
Base:
130g plain chocolate biscuits
1/2 teaspoon ground cinnamon
60 g butter, melted


Creamcheese:
1/4 cup water
1 tablespoon gelatine


380 g cream cheese
1/2 cup caster sugar
1/2 cup milk
60 g white chocolate, melted
60 g milk chocolate, melted
60 g dark chocolate, melted
1 cup cream, whipped


Method:
Base:

  • Grease 8" round spring form pan
  • Place biscuits in food processor bowl until fine crumbs, add cinnamon and butter; mix until well combined. Press into base of prepared springform pan. Refrigerate 20 minutes or until firm. 


Creamcheese:
Place water in small heatproof bowl. Sprinkle gelatine over water. Stand in boiling water. Stir until gelatine is dissolved, cool slightly.


Beat cream cheese in a mixer till soft. Add caster sugar and beat again. Add milk then stir in gelatine as well as whipped cream. Divide mixture equally between 3 bowls.

Melting 3 types of button chocolate separately, first chop them into small pieces, avoid contact with water, not even a droplet, melt the chocolate over low heat, constant stirring is required.

I did it with white chocolate first, melt in a small stainless steel bowl, fold in 1/3 of cream cheese mixture, fold into the pan, keep in the freezer while I wash and clean the stainless steel bowl for the next milk chocolate, do the same for dark chocolate.
