Jane's Double Cheese Bites
Thermomix Fervent Thermist
Ingredients
240g - 2 eggs = g of Milk
1tsp Instant Yeast
60g Butter
60g Sugar
70g + 30g Parmesan
450g High Protein Flour
50g wholemeal flour
1/4 tsp Salt
2 eggs ( remember to weigh the eggs without shells)
Egg wash (optional) 1 egg + 1/8 salt (mix well)
Preperations:
1) In a dry TM bowl, put in Parmesan dices to mill5 sec / speed 10
Transfer to a bowl, set aside.
2) Put a small bowl on TM, weigh 2 eggs in the bowl, get the reading, take 240g minus the weight of 2 eggs to get the correct amount of milk to be used.
3) Put milk, yeast, butter and sugar to blend
1 min / 37°C / speed 3
4) Add flour, 70g Parmesan cheese and salt, to mix
15 sec / speed 6
5) Then knead
3 min / knead
6) Transfer dough to Thermomat, shape into a ball, wrap with Thermomat. Rest for 10 minutes.
7) Using a dough cutter, cut dough into 4, roll each small dough into a long and thick dough, cut into smaller size roughly 10g, pull this small dough double longer cut into half. Place them in a lined baking tray.
8) Cover with cloth, let it proof for 30 minutes.
9) Preheat oven at 180°C, egg wash, sprinkle remaining Parmesan cheese over.
Bake for 15 minutes. Transfer and cool in a cooling rack.
