Sourdough Bagel Thermomix Recipe
10g Sugar
210g Water
100g Sourdough Starter (60% hydration )
35g Butter in room temperature
360g High Protein Flour
5g Salt
Boiling
1 tbsp Baking Powder
A pot of water app. 2 litre water
Glazing
Egg + pinch of salt, lightly bitten
Preparation
1) Put first 3 ingredients in a mixing bowl, mix
20 sec / Speed 3
2) Add in next 3 ingredients, start with speed 3 then turn to speed 6 for 10 seconds.
3) Continue kneading,
3 min / knead
- Take out and knead into a round dough, wrap with Thermomix baking sheet, let the dough sit in for the first rising - 2 hour.
I keep in over with 50°C
2. Take it out after 2 hour, knead it and press the excess gas out to knead into round dough, divide into 6 equal portions, roll into long slim dough, press one end, lay the slim end on the flat end make into a loop like doughnut 🍩, wrap and close the seam.
3. Align them on individual 3.5" square baking paper (prepare before starting, easier to pick it up and slide them into hot pot) in a baking pan, spray water, keep into oven with 50°C, let it prove for 2 hour.

4) Pre-heat oven at 210°C
5) In a pot fill with 2 litre water, add baking soda, boil.
Put in bagel together with paper sheet upside down, boil it for 1 minute, remove paper, turn over to continue boil for 1 minute. Remove and drained, align in a lined baking tray.
It is normal that they look wrinkled
Do the same to another 5 sourdough bagels.
6) Egg wash. Sprinkle mixed nuts and poppy seeds (optional)
7) Bake for 20 minutes, rotate the tray to get an even tone.
