A parent who played a duet with her girl in 'Mini Home Recital' last Saturday, and she was very happy with the  simplified version of ’云上太阳‘， which allows her to have a wonderful time with her daughter, on request, this is another simplified Christian song and another one with accompaniment.

A faithful gadget to make half-boiled eggs

Half boiled egg maker

If you are lover of half-boiled eggs, it is fantastic to have this gadget! I got this during the promotion time run by 'Safe-egg' , which you get a free 'half boiled egg draining pot', when you buy 3 racks of 'Safe-egg', I don't know how it should be called, whatever way I feel that you could understand what it is about.

By using this gadget, I can make half boiled eggs from chilled eggs, without worrying whether those eggs are over cooked or too raw for consuming. They are fantastic.

And there I went to buy another 3 racks to get another one for Debbie, my cousin. And I shall get another one for my brother too! Because we can finish up 30 eggs in a week time..... m... I better go as earlier as possible, I am kind a 'Kia Su' person.

With indicator the volume of boiled water to number of egg.

坐后面的那位男生！

靖雄告诉我他因没有带书而被老师罚站，当时他向老师解释说他的书本交上去了但没派回来，又因为他的脸部发达所以给了老师一个很无助的眼神，换回来是老师的辱骂说：‘别给我看这个可怜的样子！’

我也帮忙他找了书橱以及所有可能丢下的地方，真的没有，所以向他确定一下真的把功课交上后，跟他说：‘妈妈明天就在你下课时段去一趟学校向老师问个明白。’ 别心急不是责问老师为什么，而是交代一下要如何处理他的书若真的不见了，我一向敬佩老师，也不会在小孩面前贬低以及质疑老师的身份，从小教导他尊师重道是在他学习的路途中培养一个非常重要品德修养，这样要先从我们做起。

老师有好有坏，坏的未必以后也是这样，我相信他们会继续寻找方式与学生沟通以及教导。

再过一天，靖雄告诉我那本作业簿已经找到了，是他的同学拿错了，老师在班上也问起靖雄：‘坐后面的那位男生，你的书本找到了吗？’ 当靖雄回来学给我听的时候，有点儿啼笑皆非，竟然教了整一年的课也不知道学生的名字。。。。嗯，还是别笑老师，因为我有时候也不太记得学生的名字， 哈！

Mini scones are on their way

Wonderful aren't they?

 Bake scones for two consecutive nights, things have becoming handy, today's mini scones look better than the one I baked yesterday, it was rather over time, appeared to be darker and harder (I would say crispier). And I believe today's mini scones could taste better if I allow them to be baked 2 more minutes..., but overall they tasted nice, Gab took two and a half of them, indeed he felt a bit bad to have three, so he said he will give me the half of his 3rd piece, haha!

When baby chiffon cakes meet Devon Cream

Devon Cream:

Recipe:
4 ounces (113 g or 1/2 cups)  mascarpone
1 cup (240 ml) heavy whipping cream
1 teaspoon pure vanilla extract
1 or 2 tablespoons granulated white sugar



Instruction:

Place all the ingredients in a large bowl and beat until the mixture holds its shape and looks like softly whipped cream. Use right away or cover and refrigerate the cream until serving time.
Makes about 1 1/2 cups.

My first try on baking scones

Today is my frist try on baking scones, according to this recipe I found on Web.

Cream Scone Recipe:
2 1/2 cups (330 grams) all-purpose flour
1/4 cup (100 grams) granulated white sugar (1/2 cup if you would like to eat it without any jam and cream)
2 teaspoons (10 grams) baking powder
¼ teaspoon salt
1/3 cup (75 grams)cold unsalted butter, diced.
1 large egg, lightly beaten
1 teaspoon pure vanilla extract
1/2 cup (120 ml) milk or heavy cream
1/2 cup milk powder  Optional

Glaze: egg yoke


Instructions:

Preheat oven to 375 degrees F (190 degrees C) and place the rack in the middle of the oven. Line a cookie sheet with parchment paper. 

In a large bowl, whisk together the flour, sugar, baking powder and salt. Cut the butter into small pieces and blend into the flour mixture with a pastry blender or two knives. The mixture should look like coarse crumbs. 


In a small measuring cup combine the heavy cream, beaten egg and vanilla. Add this mixture to the flour mixture slowly. Stir just until combined. Do not over mix.

Knead dough gently on a lightly floured surface. Roll or pat the dough into a circle that is about 7 inches (18 cm) round. Then, using a 2 1/2 inch (6.5 cm) round cookie cutter, cut the dough into rounds. Place the rounds on the prepared cookie sheet, spacing a few inches apart. Brush the tops of the scones with a little cream. This helps to brown the tops of the scones during baking.

Bake for about 15 - 18 minutes or until nicely browned and a toothpick inserted into the center of a scone comes out clean. Remove from oven and transfer to a wire rack to cool. Serve with Devon cream or softly whipped cream and your favorite jam.

Makes about 12 - 2 1/2 inch (6.5 cm) round scones.
