How to make bagels softer?

An easy breakfast to prepare for us, as well as Gab's school snack I always make.

At most time, we ordered bagels from a restaurant, did you have this thought that  you hoped the bagels are softer? I had even one experience that my plain bagel was like a "chocolate" bagel, I was very curious that moment I saw it, I confirmed with the waiter that the bagel was just ordinary plain bagel, "oh my gosh!" That was what I shouted in my mind lah!


Well I have a very kind and sharing personality, when I was making my payment, the cashier asked me courtesy how was my food, I was so glad he asked, immediately I told him the hardness and the outlook of the bagel shocked me, and also suggested him to spray water before toasting bagels.

Here is the URL of an instagram video I took of the bagel I toasted at home, it is very soft, because sprayed lots of water, my son likes it soft though.

Hope this info helps many bagel lovers, as well as restaurants that sell bagels.



Chicken filling that I cooked on a whim, surprisingly it tasted awesome, I really mean awesome, Gab loves it so much, and even wanted to reserve for dinner.

Beef Bolognese Pasta Thermomix Recipe




THERMOMIX RECIPE

JANE'S BEEF BOLOGNESE PASTA


Ingredients A:
800 g Water
1 tablespoon Salt
20 g Olive oil

Ingredients B:
250 g Spiral Pasta
Ingredients C:
dash Oregano
some Olive Oil, Extra

Bolognese Sauce
10 g Garlic
1 sprig Rosemary, leaves only
10 g Olive oil
3 slices Smoked Streaky Bacon, cut into strips
1 piece Yellow Onion, cut into small pieces
250 g Minced Beef
100 g Red Wine
50 g Sundried Tomatoes, Rinsed
3 pieces Tomatoes
some Grated Parmesan Cheese, For Garnishing
1 sprig Basil Leaves, About 8 pieces
dash Of Black Pepper
1 tablespoon Sugar
some Coral Bionda, or lettuce

RECIPE'S PREPARATION
1. Insert Butterfly, water, salt and oil to boil.
    mc / 8 min / V / 

     *or until boiling

2. Put in spiral pasta,
     mc / 8 min / V /

    *drain it with Varoma dish

3. Transfer to ThermoServer, add olive oil and dash of fried oregano, mix well, set aside.

Jane's Beef Bolognese Sauce

4. Chop garlic and rosemarry leaves
    5 sec / speed 6
    Scrape down those stick on the bowl.

5. Add oil and bacon strips to sauté
     mc / 5 min / V / 

6. Set Thermomix at
    5 min / 100℃ / speed 1
    add chopped onions. And minced beef handful by handful via center feeder hole.

    *Then pour in red wine.

7. Transfer beef into a bowl, set aside.

8. Blend tomatoes and sundried tomatoes,

30 sec / speed 10


9. Pour in beef, dash black pepper and sugar to cook
    20 min / 100℃ / speed 1
    Add some warm water if the sauce too dry.

10. Add basil leaves last minute.

11. Divide pasta equal portion into 4, serve with good spoonful of bolognese sauce, garnish with parmesan cheese spread, and serve with coral bionda.

Lek Dao Shua Dessert



Something I have been working on the method of cooking Lek Dao Shua with water chestnut 马蹄绿豆爽糖水 to yield 2 litres of sweet soup. Yummy~ This shall be one of the menu in future SCF team Thermomix Cooking Class.

This awesome recipe is from "Let's Prepare Mochi Bread From Scratch - Korean Black Sesame Mochi Bread 韩国黑芝麻麻薯面包" Recipe courtesy by Kenneth Goh

Using Thermomix to prepare this recipe is so much faster and easier, using the same method as Cream Puff, cook the water, add in flour to blend.... I am yet to find time to write out this recipe, I did some changes from the original recipe a few times, still wanting to make more with different proportions of flours to achieve better result, things have gotten better since I have the basic recipe provided. Really a big thank you for Kenneth Goh. If you can't wait for Thermomix Recipe, do go ahead to follow Kenneth's recipe, moreover I planned to include this recipe in future cooking class which mean, I will keep it for a short period of time before I can publish it.

Remembered last year, for one same day I tried making the mochi bun from scratch and based on various recipes given online, but failed.... 7 times in total, 7 times.... I stopped making ever after, not until the beginning of this year I tried to search for Mochi Bread recipe again and I got this recipe which was uploaded not long ago I did my google search. Thankful again.

Here you may find Thermomix is really a good helper, not only can cook, it kneads, steams, blends, chops, mixes, stir fries, weighs, it is a yoghurt maker, as well as coffee machine!! I used Thermomix to blend coffee seeds, to achieve different texture according to different ways of preparation.

Portobello Mushroom Soup Thermomix Recipe

THERMOMIX RECIPE

JANE'S CREAM OF PORTOBELLO MUSHROOM SOUP


Ingredients
15 g Garlic, Peeled
10 g Shallots, Peeled
20 g Butter
120 g Portobello Mushrooms, cut away stem, break into 2 inches cubes.
80 g Fan Mushroom
1 piece Carrot, diced.
450 g Chicken Broth, Or 1/2 cube of chicken stock+ water
3 tablespoon All Purpose Flour, optional
200 g Cooking Cream
1 piece Yellow Onion, Diced
1/2 teaspoon Salt

Preperation
1. Put in garlic and shallots to chop
    5 sec / speed 5

2. Add butter to saute
    3 min / V / spoon speed

3. Add all mushrooms, carrots and yellow onion to cook
    4 min / V / speed 1

4. Pour chicken broth, flour (if using), salt and pepper to cook
    6 min / V / speed 3

5. Pulverize the soup
    25 sec / speed 7

(Adjust time to reach personal desire texture)

6. Pour in cooking cream, continue to bring to boil
    1 min / V / speed 3

Jane's Pineapple Energy Booster


Ingredients:
400g fruit of your choice, dice and frozen.
2 bottles of soda water

Method:
Put in one can of soda water and all fruit dices. Blend,

mc / 20 sec / speed 10 



Pour in another soda water to stir, tadah!
