Jane's Kuey Teow Soup with Shredded Chicken

I made about 2 litres of chicken broth two days ago, was wondering what I can cook for... Google searched for recipes, I have a sickness - greed, I want to cook this, and I wish to have that, usually what happen after the search, plenty of 'screenshots' loaded... Duh!
Eventually no decision made. Worst scenario is when doing marketing in Mydin, often there is this problem of struggling what shall I buy if I choose recipe A, but I wanted to cook recipe B...what if this C recipe?
How it normally ends? I tell myself off by saying: 'Stop! Just make recipe A. End of story.'. Sigh, I wish I can say this at the beginning of each mind-war, that makes things so much easier and faster.
No exception, I had the simple chicken broth Kuey Teow Teng recipe, yet I wish for Ipoh Hor Fun...which requires many prawn heads and shells. That makes me thought of I should have kept all the prawns' heads and shells previously. And make sure I do it next time.
There are two types of KueyTeow, one is for stir fry, another is for soup, make sure you get the right type. 
Get ready chicken broth, cooked chicken breast, shredded. Soup Kuey Teow, rinse with hot  water, drained and set aside. 
Tips: Because Kuey Teow is very sticky and oily, you may use a plastic bag as mitten to loosen it before used.

Jane's Kuey Teow Soup with Shredded Chicken 上汤鸡丝河粉
Ingredients for 1 bowl: 一碗材料的分量
180g Chicken Broth 鸡上汤
150g Kuey Teow (Rinse with hot water, drained, set aside)
河粉(用热水烫过,慮干备用)
35g Shredded Chicken Breast 鸡胸丝
1/4 tsp salt 盐
1 stalk of Chives, cut about 1.5" length 韭菜
1 handful of Bean Sprout 一抓豆芽
Some pepper to taste 少许胡椒
2 pcs Fresh prawns 鲜明虾 ( optional ) 
Garnishing:
Spring Onion 青葱,切粒
Fried shallots 葱,爆香
Method: 做法
Put in chicken broth and salt 放入鸡上汤和盐
5 min / 100℃ / Reverse; Soft
At 3 min, Add in prawns
At 2 min, add in chives.
At 1 min, add Bean sprouts
In a bowl, set a portion of Kuey Teow, shredded Chicken. Pour soup into it, garnish with chopped spring onion, fried onion and some pepper to taste. 
You may cook 4 portions in Thermomix.

Thermomix Cover Seal

I make lemonade often, especially it takes only 1 second to make lemonade, yes it does, just 1 second. Contact Jane Lee in facebook group Thermomix - Fervent Thermist, to arrange a demo for you and your loved ones. 
What do you do with the lemon resedule? I throw it most of the time. May be you can keep some in freezer for cleaning purposes, or keep them in a bowl and store it in fridge to allow lemon natural aroma cleans the air in the fridge. 
Or...
Thermomix Bowl is made from surgical stainless steel, to prevent liquid from spilling or sipping out, a silicon cover seal is needed to help two hard items closed tightly and firmly.
Silicon stains and garlic smell retains, especially after one round of garlic ginger sauce cooking. 
You may also use baking soda or vinegar.
I have tried this way to get rid of the smell, keep the lemon resedule in Thermoserver, this fits just well when putting in cover seal. Fill with water, or/and detergent , optional(or salt). Leave it overnight.
It won't chase away 100% of the smell, but at least 80% are gone.
Don't worry, as times passed, the smell eventually off from it.

Jane's Chicken Broth




1kg Chcken Ribs/bones 
2 pcs Yellow Onions, skinned
2 sticks Carrots, diced
1 stalk Celery
1 stalk of Parsley
2 tbsp peppercorn
2,500ml Water

Everything into pot, bring it to a boiling point, turn fire low, continue cooking for 1 hour.

Leave it cool in the pot, store it in small containers, keep them in freezer till next use.

Jane's Chicken Porridge with scallops

Honestly, I don't  know how to cook, I do a lot of "google search" before each dish I cook, make some comparisons with at least 4 recipes to roughly get what is the outcome I would most likely to have.
For instant this Chicken Porridge, I took a few recipes out from my.thermomixrecipes.com in the name of "Chicken Porridge", each has its own unique ingredients, some you don't even want to try by looking at the ingredient, some shared of "secret" preperation to get smoothest texture.
I realized after the cooking is done, chicken fillets became mince chicken, which means there is no need of slicing it nor chopping it, the carrots remain its form, the porridge is smooth and soft even though I didn't pre-soak the rice and dried scallops, nor marrinated rice with sesame oil.
Taste equally good.


Here is what I had in Jane's Chicken Porridge with scallops.
Ingredients: for 2 persons
75g rice
600g water
200g Chicken Fillets
10g Sesame Oil
2 tsp Salt
1 tbp Homemade Mushroom MSG (OPTIONAL, reduce 1 tsp of salt is this is used) 
4 pcs Dried Scallops
1 Carrots, diced

Garnish:
10g Ginger, julliened
1 stalk spring onion, chopped
Some pepper and soy sauce to taste
Method:
Put in rice and water to cook
25 min / 100℃ / speed 1
As it starts cooking, throw in other ingredients.
Garnish with ginger and spring onion, pepper and soy sauce to taste.

TrueMix Monday meeting 180814

Something I like the most in weekly meeting, is I get to see cooking class live, it's funny, always makes thing easier to do after watching the whole progression.

Like making cream puff, you won't believe it is so easy to make by using Thermomix, after I have seen it, I made the same recipe 3 times in that particular week.

Today, we have Suriya chef, showed us Getuk Ubi and Sambal Petai. When we first had a look at the long list of ingredients of this recipe, I am afraid of making it, first thing came across my mind was : "I am not going to make it!"
Tricia turned to me and said the same thing I had in mind.

Well, I love sambal, one of the top in my to-do list, if I am not making it at least I get to see how she cooks it. Thankful for today's program, after the demonstration, it is in fact easy to make when you make it by Thermomix. It's a total hassle free.I snapped a few photos of the food as well as Suriya chef. I love her explanation, allow us understand more of the history of Ubi Getuk, her mom's recipe.

Lunch with Malaysia Thermomix Record Breaker

I was rather flattered when Gideon phone me to tell me that Steven and Deborah would like to meet me for lunch, they came for Thermomix branch managers meeting this weekend, taking this opportunity for meet up and knowing each other well, as we have been chatting via facebook and whatsapp.

I am so appreciated for their effort and time. We chatted a lot of their legendary story of how they got into Thermomix, and how they became Malaysia Thermomix Recod Breaker, sold 76 Thermomix in a period ( 28 days = a period) Amazing!

A very humble couple, in every sentence they acknowledge how marvelous is our God, how God helped them, and how God led their way all these years. And His blessing never ceased. Amen for our God.

Tremella Longan Drink 云耳白果龙眼糖水

Ingredients A : 材料A
15g Tremella 白木耳 (half piece 半粒)
6 pieces Red Dates 红枣
10pieces Gingo 白果
800g Water 水


Ingredient B:材料B:
20g Rock Sugar 冰糖
15pieces Longan 龙眼干 
2 pieces Pandan Leaves 班兰叶一束 (Optional,随意)


Method 做法
1)Rinse and soak tremella for at least 1 hour, cut into smaller pieces
        云耳浸泡1小时后剪小块

2)Put A to cook
     放入材料A, 煮
      mc / 15 min 分钟 / 100℃ / Reverse 逆转; Soft spoon 匙速

3) Add B, continue to cook
     加入材料B,煮
     mc / 10 min / 100℃ / Reverse逆转; Soft spoon 匙速

Ingredients: 材料:


1 pc Pear or apple 梨子或苹果
15g Dried Chrysanthemum 菊花干
15g Wolfberry 枸子 
20g Rock Sugar 冰糖
800g Water 水


Method 做法

Put all ingredients into TM bowl 放入全部材料

10 min 分钟 / 90°C / Reverse 逆转; Soft spoon 匙速

Ingredients 材料 A:
15g Tremella 银耳(Half piece / 半颗)
800g Water 水

Ingredients 材料 B:
10g Wolfberry 枸杞
15g Dried Chrysanthemum 菊花干
10g Rock Sugar 冰糖


1) Rinse and soak tremella for at least 1 hour, cut into smaller pieces
        云耳浸泡1小时后剪小块
2) Rinse dreid chrysanthemum
冲洗菊花干

3) Put in A   放入A,煮

15 min 分钟 / 100°C/ Reverse逆转; Soft spoon 匙速

4) Add B  continue cooking  加入B 继续煮

4 min 分钟 / 90°C/ Reverse逆转; Soft spoon 匙速

Home cooked Kaya with Thermomix

This is the recipe I've gotten from Web, and it is wonderful recipe which could make awesome kaya.
I use molasses natural sugar instead. With Thermomix, everything becomes so easy.

Home Cooked Kaya with Thermomix 自制加央

Less Sugar 少糖加央唷!
Ingredients:
200g Molasses Brown Sugar 糖蜜
2 pieces Egg Yolks 蛋黄
3 pieces Whole Eggs 全单
320g Fresh Coconut Milk 新鲜椰浆液 
8 pieces Pandan Leaves in bundle 班兰叶束

Method:
sec=秒;speed=速度
(You may need to mill castor sugar in 10 sec / speed 10 before adding egg to mix 
如用白糖必须先研磨)
1) Add Eggs and Molasses brown sugar into TM bowl, mix 搅拌蛋液和蜜糖
30 sec / speed 3
then cook 然后煮
10 min / 90℃ / speed 3

2) Add coconut milk and pandan leaves and cook加入椰浆和班兰叶
mc / 40 min / 100℃ / Reverse; speed 2 
(Place simmering basket on top of the lid to prevent splutter)把篮子放置盖上以防喷溢
Add time if it is still watery可增加时间直到您想要的浓度

3) Let it cool for about 10 minutes, blend  置放十分钟待稍冷 再磨
10 sec / speed 9

Jane's Spicy Red Chicken 红辣辣鸡

I've gotten this recipe from Cold Storage Supermarket, this leaflet is on a display rack where there are plenty of recipe leaflets for taking.
I glanced through all four recipes, apparently looking for the easiest to cook. Ayam Masak Merah! Here you go!

Ayam Masak Merah / Spicy Red Chicken for Thermomix:

Jane's Spicy Red Chicken

4 pcs Chicken Thigh, Chopped.
4 tbsp Dark Soy Sauce 
20g Oil
1 pc  Large Yellow Onion, Sliced
15g Garlic
60g Sambal paste
160g Tomato Purée
2 tbsp Honey or Maltose ( I used maltose, taste nice though)

1/2 tsp Salt
1/2 tsp Pepper
1/2 pc Lemon Juice (replace with lime juice)
Ayam brand Tomato Puree 160g

Method:

1) Season chicken with dark soy sauce. Set aside.
2) Put in garlic to chop,
    mc / 5 sec / speed 5
3) Add oil, onion and sambal to sauté
    5 min / V / Reverse, Soft speed
4) Add marinated chicken pieces into TM bowl, fry
    5 min / V / Reverse, Soft Speed
5) Add in the tomato purée, honey, salt pepper and lemon juice.
    10 min / V / Reverse, Soft Speed 
    Or until gravy thicken
4) Serve with rice or bread.

Thermomix 炒粿条


之前发了一篇英文版的Thermomix Char Kuey Teow食谱,这是 因着丽霞不会英文,然而又要鼓励她用Thermomix做料理,所以就必须翻译为华文版的食谱, 那么她也无需忙了一天的工作,回家煮饭后还要花精力去收拾和清理的家务。







在还没开始之前就先要准备CKT炒粿条酱汁,先放一个量杯在Thermomix上,开始量酱汁的材料,然后拌匀。

Thermomix炒粿条的(CKT)酱汁:备用   *足够共1kg 粿条
55g  酱青/酱油
5g    黑酱油
10g  耗油
20g  鱼露
1/4  糖


一盘一人份量炒粿条的材料:(顺序排列了)
10g  蒜头
 2条 干辣椒 (随意)
20g  食油或猪油
5 片 腊肠切片
4只  鲜虾
6只  蚶
6片  乌贼切片
1汤匙 辣椒糊 (Cili Giling)
200g 粿条
1束 韭菜 (切成1寸半的长度)
1抓 豆芽 (浸泡在水里备用的)
少许 胡椒粉
1粒 蛋

做法*先把所需要的材料排列在Thermomix前,因为这个做法是按次序把材料从中间的盖口丢进。
1) 把手套进朔胶袋里抓一把80g的粿条,下CKT醬汁和辣椒糊,搅拌好。
2) 下蒜和干辣椒(如有)剁碎
     5 秒 / 速度 5, 用锅铲刮下粘在锅身的蒜米
3)安置‘蝴蝶’Butterfly.
4)下油和腊肠片爆香,设定按钮
    6 分钟 / V / 逆转,匙速
5)在4分钟,加入 鲜虾,蚶,乌贼片,粿条,韭菜和豆芽,放上MC盖
7)在2分钟,在盖盘上打一粒蛋(mc盖是置放着的),用叉子搅拌,让蛋液慢慢滑入。
8)   再煮好后稍等一分钟就可以端盘了。

慢慢地一个一个材料下,简单有轻松的炒粿条!
一大乐趣是不必洗刷厨房了!

Thermomix Char Kuey Teow

Char Kuey Teow (CKT) is one of my favourite dishes. There is one restaurant in USJ 16 serves delicious "Sister Char Kuey Teow", we used to go there for CKT only, but ever since the chef passed the cooking 'chore' to a maid, the taste is no longer the same, somehow.... not the same, I tried to go back a few times to check if the cook still a maid, sadly yes, still the maid does the cooking. 

Ever since I never go back again. 

No doubt CKT still my favourite, especially fried with extra chilies.

I have seen a photo of CKT cooked by Thermomix, that was the moment I thought I am gonna make my own one of the days. There isn't any demo arranged in this week, thinking of having a break to rest well. Cooking something I like to eat. In the morning Just when I shopped in Mydin, I saw a pile of  prepacked Kuey Teow, and yellow noodles near vegetables department, I was very ambitious, wanted to buy both, although I dont quite like yellow noodles, on second thought, I have thrown away many uncooked stuff which gave my heart a hard hard hard pinch by doing it, thinking it shall be a good lesson for not over buying. 

Hence, just get one packet of  1kg Kuey Teow, why buying so much? Ooh, because I want to practise cooking it to the best I could, my plan was to cook for tonight and tomorrow lunch. First thing I did was pick up the phone, whatsapp my sis-in-law to inform her not to cook our dinner and tomorrow lunch. 

Google a few recipes, came across Ohbin's Recipe, she mentioned about Wendy's CKT recipe is very much closer to Penang CKT taste, and the photos of their CKT can really tell the 'TASTE' loh, therefore I picked up this recipe, convert into Thermomix recipe. 

Wendy mentioned about the importance of CKT sauce, that is the key of a good taste CKT, I would also advice Fervent Thermomist (join 'Thermomix - Fervent Thermomist' Facebook group) please prepare the sauce ahead, and arrange all other ingredients before start cooking. 
One 'laokui' (discourage) incident was, I bought the wrong chili paste, instead I bought 'sambal', and the second time I bought AGAIN 'sambal', what is wrong with me!! The first plate I fried with sambal, it really didn't taste like what it should be. 

Never have I noticed there are tons of different chili paste for different recipes. wooosh, really took quite sometimes to get what I want and YET gotten the wrong one! Isssh....

After fetching Gab from school, we went again to Giant to finally get a CORRECT Chili Paste - Chili Giling. (Thanks to Nimmy, you left a very useful clue in the comment to help me get the correct chili paste)

Second plate for Gab, he loved it. Mun Wah is so clever, gotten a deal to come over my house tomorrow for homecooked food, he said he is good at commenting food,  but I rejected his offer by saying: "I am mastering Char Kuey Teow at the moment, can not comment, just FINISH the food." XD

As for the prepacked CKT, I did observe all the stall owners will put their hand into a plastic bag to split open those Kuey Teow that are stick together before frying. Set aside. I did that too. Haa, thank goodness for this observation, it is helpful though.

Here's the recipe for the CKT sauce, you can mix extra and refrigerate it : (炒粿条华文食谱)

CKT Sauce (for app. 5 plates)

  • 55g soy sauce
  • 5g dark soy sauce
  • 10g oyster sauce
  • 20g fish sauce
  • 1/4 tsp sugar

Ingredients for A Plate of CKT : (Arranged in order)

  • 10g Garlic (I prefer a lot of garlic)
  • 2 pcs Dried Chilies (Optional, if you do not like spicy, just omit this)
  • 20g Oil / Pork Lard
  • 5 Slices Chinese Sausage
  • 4 pcs Prawns
  • 6 pcs Cockles
  • 6 pcs Cut Squid (Gab likes squit, so I put this in) 
  • 1 tbsp Chili Paste (Cili Giling)
  • 200g Kuey Teow (Room Temperature)
  • 1 bundle of Chinese Chives, cut  1 1/2 inch in length
  • 1 handful Bean Sprout (Soak in the water)
  • Some pepper to taste
  • 1 pcs Egg 
Method: (Get everything prepared and arrange in front of you, we are going to do it quick)
1) Take 200g Kuey Teow, in a bowl mix with chili paste and 2 tbsp CKT sauce, set aside.
2) Put garlic and dried chillies, chop
    5 sec / speed 5 , then using a spatula to scrape down.
3) Insert Butterfly
Add oil and Chinese sausage slices to sauté
7 min / V / Reverse, soft spoon  
4) At 4 min: add prawns, squid and       Kuey Teow
5) At 3 min add chives and bean sprout, cockles and sprinkle pepper.
6) Cover with mc
7) At 2 min break an egg onto lid-dish, using a fork to stir the egg, let the egg mixture triggers in slowly.




Please do not stress of the time when to put in, you just do it slow and steady, adding in one ingredient by one, the time will just right.

I love Thermomix, save lots of my cleaning time, even after a plate of  Char Kuey Teow, my kitchen still as clean as it is before. Muaks Muaks....

Tips: Puting a bowl on top of Thermomix to weigh each ingredient for CKT Sauce.

Jane's Ginger Garlic Lemon Apple Cider Honey Sauce

Jane's Ginger Garlic Lemon Apple Cider Honey Sauce or Drink 


I once bought a few bottles of this Ginger Garlic Lemon Honey Sauce 1 litre for RM75.
Even heard of my cousin said, this secret remedy recipe is for sale at RM150. (What??? I should have deleted my recipe in my.thermomix.com only give it to those who buy Thermomix via me.... on second thought, fine, it is somehow easy to make, and recipes are all over the net.)
I can cook it now, since I have Thermomix to do mostly the job. (Please do not hesitate to contact me to buy a Thermomix. I am using this to help me cook and blend red dates, rock sugar, fruit juice as well as mix veggie juice.) 
It is good to clear blockages in blood vessels.

Honey: Honey acts as a natural sweetener in this recipe, and I find it necessary with the garlic and ACV combination (although I actually don’t mind the vinegar on its own.) It is also anti-bacterial, anti-viral, and anti-fungal-but if you are drinking it for a cold it’s really the anti-viral part that matters. It can also help quell a pesky cough.

Lemon: Lemon adds fresh flavor while it works as a natural anti-viral component in the drink, working in tandem with the honey to flush out the virus that is taking over your cells.
Apple Cider Vinegar: The list of apple cider vinegar’s health benefits is virtually endless, with some theories having more solid backing than others. The main benefit it has in this drink is soothing a sore throat and relieving congestion, both of which I have found it to be very successful at doing.
Garlic: Ah, garlic. The infamous date-ruining food, the stinky rose, Italian perfume…it has many names, but its connotation is the same-it will make you smell. The reason for the smell is because constituents in garlic cause the release of hydrogen sulfate the same gas that smells like rotten eggs. While that sounds terrible, hydrogen sulfate is actually quite useful at low levels in the body, and we naturally produce some on our own. It is theorized that this is one of the reasons it has healing benefits, but it is not known for sure. What is known is that it works a treat on clearing on congestion and shortening the duration of the cold.
