Feedback on CNY German Cookies

I've just gotten a feedback, "Inside got 5-6 burnt cookies and the cookies cannot hold, crumble into pieces before even eating."

I have decided to bake another replacement and deliver to this friend directly.

There are 4 things I need to clarify:

1) I admit the burnt cookies, I shouldn't have put them in, I believe mom feel it's alright, as the cookies tastes nicer when it is a little burnt (base).

2) The softness of this cookies is it's uniqueness, I have been taking this since 10 years ago, it's my cousin who baked this every Chinese New Year, me and my family like this recipe because of it's softness.

3) I didn't add more flour to get harder and firmer cookies. Indeed I used more flour and changed the recipe last year, it did give me firm and harder cookies further more, I can make more cookies by adding in more flour. But I honour the original recipe which I got it from my cousin, and she did ask me to stick on the original recipe.

4) No chemical ingredient is used in this, not even a bit of baking soda.

Things I've learnt from my precious friends, it's ok to vary recipe (more flour)to bring out the better result and better quality of this cookies. I need the customer for self collection to avoid unnecessary collision.

First time ever had this thought to bake cookies for sale! Dear friends, thanks for all your support, because of you, this Jane's Bakery is established, and I have a different CNY this year, ABUNDANCE! Wishing you all a Blessed CNY!

With my mom's help, I'm able to finish 19 boxes of 250g in a day. Thankful for her love.

Cheesy Omelet

For someone who loves cheese, egg and bread..... my little darling.

All you need:

2 tbsp cooking oil
2 eggs
1 slice of cheese
some mayonnaise (optional)

Beat the egg, heat the pan with 2 tbsp cooking oil in a non stick pan, pour eggs into pan, break cheese into smaller pices spread them on top of the egg, scramble the egg, turn off the fire as fast as you see egg is cooked but still remains some moisture.

Spread some mayonnaise on a bread, sandwich the cheesy omelet, here you go.... yummy breakfast!

Tips:
I used to keep mayonnaise in a small plastic bag, cut a corner away, keep it in a Tupperware ready for use whenever I want.

生命里没有可行的实际计划，没有可安抚的承诺，那不就是把房子建造在沙土上吗？一个家没有安稳的根基何来爱？何来满足？何来盼望？

我要常提醒自己，别让他的自私骗走我的尊严。

Gab is standard 5 this year, a busy year for UPSR preparation, all schools are giving intensive tuition after school from Monday to Friday, which will start from next month, by then his school shall only be finished at 3pm or 3.45pm, all my music class starts from 2pm, I wouldn't have free time to do picking up, and sending to another tuition.

There is only one best choice to solve my headache- Day Care; he'll be well taken care of, someone will pick him up from school, checking his homework + another round of tuition until 5:45pm, and is cheaper than sending him to different individual-tuition, which is a perfect plan to me, but it doesn't sound good to him though.

Yesterday was his first day in center, hmm....even though I was busy with my 'duty' some church works and teachings, I felt a little lonely, thinking of him the whole afternoon, wondering if he's doing well?

We chatted about his day in center last night, he told me there's no one washing their feet after entering the building, but he did, I encouraged him not to quit this good habit, he nodded his head; the floor was rather sandy, and he said: "I am not use to it........ (paused) but I will get use to it!"

Everybody has to memorize 20 vocab, and some manage 50, he barely made 20, I told him that he'll get better with constant practice, and I will be there to support and help him, he smiled because he knows this is good for him.

This is his first day in day care.

Crevettes Saute St Lucia - French Creole Style Sauteed Prawns

Ingredients:

· 12 large prawns , peeled with tails left on

· salt and pepper , for seasoning

· 2 teaspoons green peppercorns , crushed

· 2 garlic cloves , peeled and crushed

· 100 g butter

· 1 lime, juice of

· 2 teaspoons Worcestershire sauce

· chopped parsley

· salt and pepper

· olive oil

For Garnish

· red peppers or green peppers or yellow pepper , cut into thin strips

· 1 lime , quartered for garnish

Directions:

Heat olive oil in small frying pan and add the seasoned prawns. When the prawns are sealed, put in a hot oven for five minutes.

After removing the pan from the oven, add your butter, parsley, garlic, green peppercorns, Worcestershire sauce and lime juice.

Mix together until the sauce is creamy, then serve on a hot plate. Garnish with strips of peppers and lime.

Fried Prawns in French style

A simple way to cook prawns other than Chinese stir fry way.

Original recipe requires more than what I have, there were a few things I dropped, but it doesn't reduce the taste, it was delicious!

For two-

Ingredients:
10 prawns, peeled. Marinated with salt and pepper.
2 garlic cloves, peeled and crushed
2 tbsp margarine
1 lime, juice
chopped parsley
olive oil

Directions:
Heat olive oil in small frying pan and add the seasoned prawns. When the prawns are sealed, remove and set aside.

Cook butter, parsley, garlic, and lime juice, dress the prawns with this garnish.

Chocolate Meringue Cookies

I was rather playful, I piped letters instead of 'droop' shape.

Chocolate Meringue Cookies

Ingredients

· 3 egg whites

· 1/8 teaspoon cream of tartar

· 1/2 teaspoon vanilla extract

· 2/3 cup white sugar

· 1 tablespoon unsweetened cocoa powder

· 1/4 tsp salt

· 1/3 cup semisweet chocolate chips

Directions

1. Preheat oven to 120°C.

2. Combine egg whites, cream of tartar, salt and vanilla. Beat at high speed until the mixture is firm. Gradually add in sugar; beat until stiff peaks form, and mixture becomes glossy. Fold in cocoa and chocolate chips.

3. Drop mixture by teaspoonfuls on to a greased cookie sheet. Bake for 25 to 30 minutes. After 25 minutes turn the oven off, but leave the meringue in there and let them cool down, let the door slightly open, by doing this would give you best meringue.

Christmas Log Cake

I'm using 'Chocolate Swiss roll with blueberries filling' recipe. Make a 11" X 9" Swiss roll

Log Cake ingredients
63g egg yolk (3 egg yolks)
19.5g caster sugar
2 tsp cocoa powder

94.5g egg white (3 egg whites)
47g caster sugar
35g cake flour
1/8 cream of tartar
19.5g unsalted butter, melted

Filling
Blueberries filling
Non-dairy whipped cream (I used devonshire cream)

Method
1. Whisk egg yolks and sugar over a pot of hot water till thicken and pale in color.
2. Add cocoa powder into egg yolk mixture, stir well and set aside.
3. In another clean bowl, beat egg whites on high speed until foamy, gradually add in sugar and beat till glossy and soft peaks form.
4. Take one-third of egg whites mixture to mix with the egg yolk mixture using a hand whisk. Then fold in the remaining egg white using a spatula until well combined.
5. Gently fold the sifted flour (in 3 batches) into the batter. Add in melted butter and gently combine well.
6. Pour the batter into baking tray lined with baking paper. Spread evenly with a scraper. Gently knock the tray on tabletop to remove air bubbles trapped in the batter.
7. Bake in preheated oven at 180C for around 13mins.
8. When cake is done, remove from pan and place on a wire rack and put in a big plastic bag to cool.
9. To assemble Swiss roll, turned cooled sponge onto a clean work surface. Peel off parchment paper, spread evenly layer of whipping cream over top of sponge. Follow by spread a layer of blueberries filling.
10. Gently roll up (How to roll up Swiss Roll?) the sponge to make a Swiss roll. Wrap with cling wrap and chill in the fridge to allow the Swiss roll to set. Slice to serve.

Chocolate Buttercream Frosting ingredients
This measurement for 11"X9" Swiss roll
1/2 cup /113g unsalted butter, softened (but not melted)
1 1/2 cups icing sugar
1/4 cup cocoa powder
1/4 tsp table salt
1 tsp vanilla extract
2 tbsp milk or heavy cream

Instructions

Cream butter for a few minutes in a mixer with the paddle attachment on medium speed. Turn off the mixer. Sift 3 cups powdered sugar and cocoa into the mixing bowl. Turn your mixer on the lowest speed (so the dry ingredients do not blow everywhere) until the sugar and cocoa are absorbed by the butter. Increase mixer speed to medium and add vanilla extract, salt, and milk/cream and beat for 3 minutes. If your frosting needs a more stiff consistency, add a little more sugar. If your frosting needs to be thinned out, add additional milk 1 tablespoon at a time.

I didn't sift in cocoa powder, as I need some for piping, therefore I wait till the sugar is done, scoop out 1/4 cup of the mixture before adding in cocoa powder.

Crispy Onion Rings

Crispy Onion Rings

Ingredients:

1/2 cup all-purpose flour
1/4 cup cornstarch
2 tbsp instant mashed potatoes
Add pinch of salt to taste
big pinch of chili powder (cayenne) for colouring
1 cup cold water + 2 tbsp Eno fruit salt (original flavour)
2-3 cups breadcrumbs
Vegetable oil for frying
2-3 yellow onions, cut into 1/4" rings (not any thicker than that)
Mayonnaise + chili sauce + tomato sauce for the dipping.

In a bowl, mix all dried ingredients all-purpose flour, cornstarch, instant mashed potatoes, salt and chili powder, pour Eno water in the mixture to make onion ring batter.

Pour breadcrumbs in another bowl.

Cut yellow onions into rings, dip into onion ring batter, use a fork to move onion to a thorough coating, toss it to breadcrumbs pool, use another fork to move onion rings to a thorough coating before frying.

This recipe really make crispy onion rings, enjoy!

Tears of missing him

A few days ago, my sis-in-law told me that she is going to save a copy of Gab's young time videos, I haven't owned a camera that time, missed most of his time when he was born.

These videos were taken where most of his time with Alycia and Bryan. 3 of them were learning to pick up vocabulary and forming sentences.

Something out of my control while watching those videos, tears pouring unexpectedly, and uncontrollably, I don't know why, Alycia kept asking me why did I cry, was I sad? No, I was not, I'm overwhelmed that I still can see Gab at 2, I miss him........ yeah, perhaps, this should be called tears of missing him.

Homemade Candy

It's a recipe of Candy Cane, a very fun holiday project for kids.

Ingredient:

2 cups sugar
½ cups light corn syrup
½ cups water
¼ tsp cream of tartar
¾ tsp peppermint extract

Method:

Put sugar, corn syrup, water and cream of tartar to a very hard boil till sugar melt totally without stirring.

Remove from heat and add peppermint. Add food colouring as you wish.

Tips:
Pre-heat your oven to 200 degrees, you might need to keep the sugar warm later.

Grease table top (stainless steel or marble top) and utensil, also put some on your hands or gloves if you are using. It's really hot, do give a minute of cooling to the right temparature before using hands. Kids really have fun making their own shapes of lollipop.

To make white lollipop, pull sugar quickly and fold it back on itself for many times, it will turn the sugar to beautiful pearly colour before turning into white. By doing this, it's also adds air to it so the candy is 'crisp' instead of hard.

Homemade Mochi

Mum just learned this from Auntie Tan during her help in SCF Youth Mission Training. She made us this one, and surprise to know how easy is to make this from home.

Ingredients:

Peanut coating
2 cups of fine ground nut (rosted before put into food processor)
1/2 cups of castor sugar (vary to suite your tast)

Mix these two ingredient and set a side ready for use.

Mochi
2 cups of glutinous rice flour
1 cup of water

Mix these two ingredient in a greased 8" round tin, steam for about 10 minutes over high heat.
Once it's cooked, put a tablespoon of vege oil to knead this hot dough.

knead them into small balls, coat them in a pool of peanut mixture.

Cream Scone Recipe:
2 1/2 cups (330 grams) all-purpose flour
1/4 cup (100 grams) granulated white sugar
(1/2 cup if you would like to eat it without any jam and cream)
2 teaspoons (10 grams) baking powder
¼ teaspoon salt
1/3 cup (75 grams)cold unsalted butter, diced.
1 large egg, lightly beaten
1 teaspoon pure vanilla extract
1/2 cup (120 ml) milk or heavy cream
1/2 cup milk powder Optional

Instructions:

Preheat oven to 375 degrees F (190 degrees C) and place the rack in the middle of the oven. Line a cookie sheet with parchment paper.

In a large bowl, whisk together the flour, sugar, baking powder and salt. Cut the butter into small pieces and blend into the flour mixture with a pastry blender or two knives. The mixture should look like coarse crumbs.

In a small measuring cup combine the heavy cream, beaten egg and vanilla. Add this mixture to the flour mixture slowly. Stir just until combined. Do not over mix. Wrap in sling wrap refrigerated for about 30 minutes.

Tips:

Pastry doughs should be handled as little as possible and kept cool. Chill mixing bowl into the refrigerator for 30 minutes beforehand.

It's good to dip your hands in a cold water and dry thoroughly before kneading.

Pastry doughs should always be rested in the refrigerator before rolling out.

Knead dough gently on a lightly floured surface. Roll or pat the dough into a circle that is about 7 inches (18 cm) round. Then, using a 2 inch (4.5 cm) round cookie cutter, cut the dough into rounds. Place the rounds on the prepared cookie sheet, spacing a few inches apart. It's okay if you don't gaze the top with egg, which I didn't do it.

Bake for about 15 - 18 minutes or until nicely browned and a toothpick inserted into the center of a scone comes out clean. Remove from oven and transfer to a wire rack to cool. Serve with Devon cream or softly whipped cream and your favorite jam.

It makes about 15 -18 of 2 inch round mini scones

Devonshire Cream also known as Devon Cream

Ingredients:
4 ounces (113 g or 1/2 cups) mascarpone
1 cup (240 ml) heavy whipping cream
1 teaspoon pure vanilla extract
1 or 2 tablespoons granulated white sugar

Instruction:

Place all the ingredients in a large bowl and beat until the mixture holds its shape and looks like softly whipped cream. Use right away or cover and refrigerate the cream until serving time.
Makes about 1 1/2 cups.

Triple Chocolate Cheesecake

Triple Chocolate Cheesecake

Ingredients
Base:
130g plain chocolate biscuits
1/2 teaspoon ground cinnamon
60 g butter, melted

Creamcheese:
1/4 cup water
1 tablespoon gelatine

380 g cream cheese
1/2 cup caster sugar
1/2 cup milk
60 g white chocolate, melted
60 g milk chocolate, melted
60 g dark chocolate, melted
1 cup cream, whipped

Method:
Base:

Grease 8" round spring form pan
Place biscuits in food processor bowl until fine crumbs, add cinnamon and butter; mix until well combined. Press into base of prepared springform pan. Refrigerate 20 minutes or until firm.

Creamcheese:
Place water in small heatproof bowl. Sprinkle gelatine over water. Stand in boiling water. Stir until gelatine is dissolved, cool slightly.

Beat cream cheese in a mixer till soft. Add caster sugar and beat again. Add milk then stir in gelatine as well as whipped cream. Divide mixture equally between 3 bowls.

Melting 3 types of button chocolate separately, first chop them into small pieces, avoid contact with water, not even a droplet, melt the chocolate over low heat, constant stirring is required.

I did it with white chocolate first, melt in a small stainless steel bowl, fold in 1/3 of cream cheese mixture, fold into the pan, keep in the freezer while I wash and clean the stainless steel bowl for the next milk chocolate, do the same for dark chocolate.

Learning how to play piano accompaniment by reading chords

Playing chord is a real big deal to us especially when we are classical trained, I know how you think about whenever we read no notes, we become handicap.

After being a Christian, I learnt how to play by chords from brother Keng Poo, and found it is real easy, you just have to understand it and play with it often. 

Start from C major, you may want to just play all these chords in root position, meaning in 1,3,5 form. 
Knowing the chord alphabet well, just skip letters by 3rds, e.g.  C E G B D F A C E .....

1st, 4th and 5th (primary chords) are majors, the rest (secondary chords) are minors.

7th diminished chord is rarely used.





R.H: For beginner, you may only have to use fingers 1,3,5 on your Right Hand (RH) to play in minim beat (two counts) therefore you need to repeat the same chord two times in each bar.

L.H: Just play the note according to the chord letter name in semibreve (4 counts) which means only play once in each bar. 

If there is only one chord to a bar like this:     F | C  | F | C |

If there are two chords to a bar like this:     C  Am| Dm  Em  | F  G | C |

OR to have R.H. play in crotchet beats.




You would love to know what about those chords with '/',  C/D  reads as "chord C on D, meaning playing C chord on D as the bass note.
e.g.  C  G/B |Am G | F  C/E | Dm G | 

So far, try to get a song you are familiar with, starts from C major key, if the song isn't in C major, try the chart provided below to transpose (changing key) into C major. 

How it works? 

If your chosen song is written in G major, you would like to play it in C major, follow the chart, this progression e.g.

“如果你的爱人得了一种病，你必须要照顾他一生，你还愿意接受他吗？” 难题。。。难题。。。实在的一道难题，可我答得异常快：“不愿意！”
我向来都不太喜欢给人一个‘很有盼望’但又不确定自己是否办得到的答案，免得自己变得不守信用的人，因为这样子的人我遇见无数，我晓得失望的感觉。

上一个星期还真的是我的“惊。喜周”，是惊吗？是喜吗？

从你发的一通短信开始，先是来个惊的，那一刻我心想着。。。短信由你而发的，情况应该不会太糟糕吧！虽是如此想着，但忧虑还是高挂着，像似我爸去年出事的时刻那样，完全不知所措。难得一生求个白头偕老的老伴，我真的不想这么早就失去，也不想你英年早逝，大吉利是，大吉利是！

你进院后，Michael 打来告诉我，他要告诉我到底你发生什么是，并且吩咐我别那么害怕，他说：“我告诉你，他可能得了什么病，但是你的反应别那么大，可以吗？” 我当然也是答得异常快地说：“是！我可以！”

那个时候我的头脑就不停的在假设着各种各样的病例，非常快，想必比谷歌搜寻快！会是什么病？为什么Michael要下如此的叮嘱呢？不久前他又问了这么一道奇怪的问题，不是吧！！！心跳本来已经很快了，经他这么一说，更像跑了一大圈似的加速到170了，就连我的耳朵都能听到心脏跳动时震动的响声！以上的情节只发生在一秒钟。

立刻我心里高喊着：“哇塞！把我吓得很惨！”
因为Michael是很认真的认为‘H1N1"是很严重的病毒感染，所以我不能告诉他我的“搞笑经历”。所以我也很认真地回应他，同时也忙着整理之前那无中生有的惊，来不及‘喜泣’，一方面又不能太大意，毕竟病毒感染足够杀伤力，那一天晚上不断祷告，也忙着认罪，又替你认罪，哈，这是我一般的反应，因为什么都不能做，只有靠上帝咯！

Homemade Marshmallow

Ingredients:

3 tbsp gelatin
3/4 cup cold water
2/3 cups of corn syrup
1 1/2 cups of sugar
1/4 cup cold water
1 tablespoon vanilla extract
1/4 tsp salt
1 tsp peppermint extract
Food colouring (optional)
1/4 Cornstarch for coating
1/4 icing sugar (optional, because it will be very sweet)

Dissolve 3 tbsp gelatin in 3/4 cup cold water for 10 - 15 minutes
Bring 2/3 cups of corn syrup, 1/4 cup cold water, and 2 cups of sugar to a hard boil.
1 tablespoon vanilla extract, 1/4 tsp salt, 1 tsp peppermint extract, few drops of colouring (optional) set aside.
Sprinkle cornstarch on the tray before pouring mixture. (or better to use shortening to grease the tray)
Pour corn syrup mixture into blend in high speed for 10 - 12 minutes.
Add Vanilla, salt, peppermint for a mix, lastly drop a few drops of colouring to swirl in the mixture before pouring into pan.

And wait for 6 - 8 hours for total harden.

Take out the harden marshmallow, it's easier to use scissors than knife, coat them with cornstarch before storing.

I've tried making Vanilla Marshmallow (pink), Peppermint Marshmallow (blue) and Coffee Marshmallow (brown), when making coffee marshmallow do not need any food colouring, replace with 1 tbsp coffee ess

French Macarons

I like Joanne Chang's recipe, it makes crispy and crunchy macarons, you may use converter for measurement accuracy. It is better to make lemon curd macaron filling first.

Crispy French Macarons
recipe by Joanne Chang

1 3/4 cups plus 2 Tbs (210 g) icing sugar

1-1/4 cups plus 2 Tbs (124 g) almond flour

4 large (132 g) egg whites, at room temperature (separated a day before keep in refrigerator)

1/4 cup (56.25 g) castor sugar

Make the Batter

Line completely flat baking sheets with parchment or nonstick baking liners and set aside.

Using a medium-mesh sieve, sift the icing sugar and almond flour into a large bowl and set aside.

In a clean stand mixer whip the egg whites on medium speed until foamy 1 to 2 minutes. Add 1 tbsp of castor sugar and continue to whip for another 30 to 45 seconds. Repeat 3 times with the remaining castor sugar. Once all of the sugar is mixed in, continue whipping the whites until they turn glossy and stiff (when you lift the beater(s) from the bowl, the whites should hold a straight peak without droopy, 4 to 8 minutes more.

Use rubber spatula fold in half of the castor sugar mixture. Once most of it has been incorporated, fold in the remaining mixture until just combined.

Pipe the Cookies

Using a piping bag (I used normal plastic bag as I used it in pizza just cut a corner), pipe the batter onto the prepared sheets in rounds, spaced about 1 inches apart. As you pipe, hold the bag perpendicular to the baking sheet and flick the tip of the bag as you finish each cookie to minimize the peaks. Rap the sheet against the counter several times to flatten the mounds and pop any large air bubbles. Let rest until the meringues no longer feel tacky, 20 to 30 minutes. Meanwhile, position racks in the top and bottom thirds of the oven and heat the oven to 160°C.

If the batter still feels tacky, let it rest for a few more minutes before baking.

Bake the Cookies

Put 2 of the cookie sheets in the oven and immediately reduce the temperature to 130°C (let the remaining sheets sit at room temperature). Bake, rotating the sheets and swapping their positions after 8 minutes, until the meringues are very pale golden, 15 to 20 minutes total. Cool completely on the baking sheets on racks. Meanwhile, return the oven temperature to 160°C and then bake the remaining sheet as you did for the first two.

Remove the meringues from the parchment and pair them by size.

Fill the Cookies

Using a piping bag to pipe the cookies, pipe the filling onto half of the cookies—you want to use just enough filling that it spreads to the edge when topped but doesn’t squish out much when bitten. Top the filled halves with their partners. The cookies are best the day they’re made, but you can store them in an airtight container at room temperature for up to 1 day or in the freezer for up to 2 weeks.

Lemon Curd Macarons Filling

1/2 cup fresh lemon juice
1-1/2 oz. (3 Tbs.) (45.50 g) unsalted butter
3 large eggs
1 large egg yolk
1/2 cup castor sugar
1/4 tsp. vanilla bean paste or essence
1/8 tsp. salt

Heat the lemon juice and butter over medium-high heat until just under a boil. In a medium heatproof bowl, whisk the eggs and egg yolk and then slowly whisk in the sugar until combined. Whisk the hot lemon juice mixture into the sugar and eggs bit by bit, you don't want to cook the egg with hot lemon juice mixture.

Return the mixture to the saucepan and set over medium heat. Cook, stirring constantly with a wooden spoon and scraping the bottom of the pan frequently, until the curd thickens and coats the spoon, 2 to 4 minutes. Draw your finger along the back of the spoon; when the curd is done, it should hold the trail.

Remove the curd from the heat and strain it through a fine sieve into a bowl. Whisk in the vanilla and salt. Cover with plastic wrap, pressing the plastic onto the surface of the curd, and chill for 1 to 2 hours before using.

The curd can be made up to 5 days ahead; refrigerate in an airtight container.

When I want to start making macarons, the recipe requires almond flour, and I have been looking up and down, there isn't almond flour for sale, and so I google for 'what is almond flour?' And I found it's easily can get by grinding it with a food processor, which means it can be self made!

Here I bought a packet of ground almond and borrowed a food processor from mom, start making my own almond flour.

I would rather buy instant almond flour if I could, because it takes up lots of my time, especially the processor didn't do a good job to find grind those almonds, I need to press almonds through a sieve to really get the flour like almond.

Ingredients

· 1 1/4 cups Oreo chocolate biscuit crumbs
· 80g butter, melted

· 500g Cream Cheese, softened
· 3/4 cup brown sugar
· 3 teaspoons gelatine dissolved in 1/4 cup boiling water
· 1 teaspoon vanilla bean paste
· 1 cup thickened cream, whipped

Method

· COMBINE the biscuit crumbs and butter. Press into the base of a greased and lined 20cm springform pan. Chill.

· BEAT the cream cheese and sugar with an electric mixer until smooth. Beat in gelatine mixture, whipped thickened cream and vanilla bean paste until just combined, fold in cream cheese mixture. Pour mixture into prepared base and refrigerate for 3 hours or overnight.

I personally think cheesecake is the easiest cake to make, and everybody likes to eat them.

As Kevin and I were teaching in Messiah II last Sunday about first Fruit of Holy Spirit - Love, we talked about loving a thing is different for loving a person. A very funny illustration was, when someone you loved have hurt you or have failed you, I said to the children: "The normal reaction will have as a little children is to say: 'I hate you!!!' or 'I don't want to be friend with you!!'" and I continue to tell them, I love pizza, while I am eating my favourite pizza, I dropped it on the floor accidentally, I will not point to the pizza and shout: "I hate you!!!" Then followed by laughter from all little children, even me, I didn't know it was so hilarious to make them laughed like that.

Love always come with a few rules to obey, we don't say they are conditioned, but a way to protect someone whom you love, e.g. traffic rules, school rules, house rules.... and so on. God has given us rules in Mt. Sinai. The Ten Commandments are divided into two parts we called two great commandments

Honour the Sabbath's day

Yes, I know, I've walked through this path, I chose to walk away, I chose to hide from God, I chose not to talk to Him, I chose not to listen to Him....

You might have these thoughts:
"I took granted from God's love, I am not worthy to be loved since I have chosen to do these to shame Him, "

"I have tasted His greatness, and yet walked astray, I ought to have punishment. "

and so on.... and on .... and on.... that just keep you STILL away from Him.

How?

Be it 'take for granted', be it 'I'm not worth it', be it 'I am fooling God', be it 'I am shameful to face Him again!'. Do you think God doesn't know about it? Do you think God will look at you in another 'coloured specs'? Do you think God will send punishment onto you?

Don't be fooled, God doesn't send punishment, those punishments are the consequences from the wrong choice we've made. But if you turn to God right away, don't be silly, punishment will not disappear, but God will strengthen you, will walk with you through this, and will grant you wisdom to solve them. Lift up your eyes, and you will see He is just there all the time!

"Come now, let us settle the matter," says the LORD. "though your sins are like scarlet, they shall be as white as snow; though they are red as crimson, they shall be like wool." Isiah 1:18

If I will have to choose to listen, I rather choose to listen to His Word than anything from my mind or others who stumble me, who puts me ashamed, who gives no hope for my future, who make me believe that I am worthless, weak and make myself believe that I am taking God for granted. Confess, "Yes I was, so what? But now I am not!" Come back to Him, follow Him, He will guide you and comfort you.

I like this psalm, hope it reminds you to focus on God's greatness, mercy and steadfast love.

"I lift up my eyes to the hills, where does my help come from? My help comes from the LORD, the maker of heaven and earth. He will not let your foot slip, he who watches over you will not slumber, indeed, he who watches over Israel will neither slumber nor sleep. Crispy Crusty Pizza

I used Chapatti as pizza base, can easily get from Mydin or any other hyper market. Using chapati as base could really give this crispy crust that we wanted.

Ingredient in order:

Tomato puree
Mozzarella cheese
Shredded yellow onion
Cut canned pineapple
Chopped mushroom (soaked dried mushroom in hot water, then chopped)
Sliced fresh tomatoes
Salami
Mozzarella cheese
Mayonnaise

Bake it for approx. 15 minutes at 120°c.

How to self-made mayonnaise squeeze?

A friend just posted a photos of her kampung, I asked of her permission to use one of her photos for my blog.

I like kampung life very much, still remember I was the only one who always like to go back kampung and stayed with granny, don't know why.... there wasn't any electricity, no water system, no drainage system, lot's of mosquitoes, hot, muddy road, leaking roof, smelly back yard as my granny raised farm animals... some how... I liked those days, sometimes for a week or two during school holidays.

Now??

No more kampung for me...

I can't remember when and where I went to this workshop for Children Ministry Leaders, I was there with a few comrades, there were many workshops conducting at the same time, we had to attend different classes separately according to our choice.

I can't remember (yeah, this is another thing that I am best in!) which workshop I went to, there was a lady at her 40s, in her training session, she shared an unforgetable testimony.

Her daughter was suffering from an illness, initial stage, she sprayed and still serve in the church, when time went by, her daughter did not get any better but worsen, she complaint and struggled with her faith very much, she even stopped serving God. But God never stopped strengthening her, talked to her. She felt weaker and fallen into self-pity badly when she rejected to hear from God, to draw closer to God, as her husband, family members and church friends never ceased praying for the daughter and her.

There was a day, her ill daughter instead of complaining of her pain, she encouraged her mom, she became realizing she can't live without God, she has became weaker and weaker without giving praise to God, and she repented and come back to God. Ill daughter remained ill, she continued her serving in children ministry, at the same time took care of her ill daughter, but this time, she serves with joy and took care of her daughter with peace, after a few months, her daughter passed away.

At the wake, when everybody mourned for the leaving of this young girl, there was a stranger walked in to shook her hand and said:"Congratulation, you've passed the test!"

I burst into tears after hearing this testimony, I told God: "Please...... I don't want this test!"

And thus .... occasionally I will have this little fear comes up and think: "What if Gab dies?" Gosh... God, no test please!!!

Last year of being '30s', a day that is given specially licence to wish, not that bad at all being another year older, I wish everybody keeps healthy and grow old together, 白头偕老. The older you grow, friends and relatives are getting more and more important to you, praise God, I have all of them! Thankful for you (everyone of you!)

Too bad my computer halts a day before my birthday, couldn't share some wonderful moment I had had immediately, hope it is done as soon as possible.

终于从我的内法（in-law）得悉前任已经有了另一半的消息，其实我也老早知道了，打从靖雄不懂什么时候跟爸爸会乡时说有一位爸爸的女性朋友跟随就猜到了，或作更早前就应该知道。。。

上个星期天主日学完毕后内法说了甚多关于上一回大家在老乡发生的事情。。。我想一切都是靖雄还不习惯罢了！回家后我立刻问了靖雄，他没说什么，我只好假设了几种心情来让他回答是非题，结果他也真不太清楚自己的心情。。。

每一个新的关系都需要时间来互相认识，小孩更需要调整与认知自己在那个新的环境里，到底他的定位是什么，忽然间他感觉迷失了，也不知道该如何表达或作反应。所以回到家也不愿意讲起，又不肯多说，更不承认爸爸的女朋友，只好我这边下一点功夫咯，解释了，还必须让他学着去习惯吧！

In this special tenth anniversary production, Footstool Players revisits some of your favourite sketches from their earliest years, as well as some brand-new material. It's a delightful bagful of seeds - stories which, when planted in your heart, will grow, yield a good harvest, and feed your soul.

Seeds is a collection of 8 sketches in the style of dramatised storytelling, featuring a mix of comedy and drama. The sketches are based on incidents in the life of Jesus, parables Jesus told, and modern-day parables, each illustrating a key biblical truth - a "seed".

It was short, un-boring, clear and sharp message in each sketch, and these 'seeds' have fallen on good soil, taken root, grown well and been fruitful in people's lives. Even I have been heard it many times, taught in many Sunday classes, am edifying through their ways of appreciation, Gab and I are blessed through these sketch performances.

And I appreciated much they played a short melody relevant to the story after each sketch, it's a little thought they have in the transition interval.
